Garlic and vegetable soup

Get your health back in track with this easy to make recipe that will not take more than 20 minutes in total for preparation and cooking process especially if you are suffering from a cold and need a quick and efficient natural medicine that will surely get that sore throat cleared and those annoying cold symptoms away rather quickly.

I present to you the healthy and rich garlic and vegetable soup, it is thickened by using oat rolls this does not only give the creamy texture but also adds fibre to this soup. This soup recipe is not only healthy and easy to make but is also a great medicine against cold infections, friendly for the heart and blood pressure due to the garlic ingredient.

Ingredients :

  • 2 teaspoon of chopped garlic 
  • 1 cup chopped and boiled mixed vegetables(french beans , carrot and cauliflower)
  • 1 teaspoon oil
  • 1/4 cup of chopped onions
  • salt (optional for flavor)
  • 2 table spoon of quick cooking rolled oats
  • 2 tablespoon chopped coriander

Steps:

1- Add oil to a preheated non stick pan along with chopped garlic and chopped onions , stir from time to time on a medium flame for 1 to 2 minutes.

2-Add  the chopped mix of pre-boiled vegetables, the cauliflower, carrot and cauliflower and add the 3 cups of water, add pepper powder and salt, mix it all together and allow it to cook for 2 minutes.

3-stir it inbetween and now add fibre rich oats and a little corriander and mix it well, make sure you stir the soup immediately or else the oats will absorb water and the soup will get thicker and thicker, allow it again to cook for 1 minute.

The soup is now ready, season it with some corriander.

Additional notes: you may add any combination of vegetables into the mix, the core essential ingredient in this recipe is garlic.
